How it feels

There is noticeably more foam here than in a palm-sized dumpling, and the rise is slower for it — long enough to watch it happen rather than just notice it has.

Looking after it

Keep it out of direct sunlight — a large piece left on a windowsill yellows and stiffens faster than anything else in the range, because there is more surface to cook. Wipe it with a damp cloth rather than washing it — soaked foam does not come back.
